Chef Judd Ellis is a native Floridian and has returned back to his home state to take the position as the Executive Sous Chef at the Walt Disney Swan and Dolphin Hotel.
Chef Judd's culinary career began early, and was inspired by his parents and their love and respect for quality locally sourced ingredients and local cuisine.
Chef Judd studied culinary in his hometown of Pensacola, Florida where he graduated with a Culinary Management Degree from Pensacola State College. Upon graduation he worked in a number of fine dining restaurants in the area.
After the 2005 Hurricane Katrina natural disaster, Chef Judd relocated to New Orleans to help with the rebuilding, rebirth, and renewal of a city that had just experienced catastrophic devastation.
In New Orleans, Chef Judd worked in a makeshift open kitchen, alongside numerous jazz trios, in the city's famed Commander's Palace for Ella Brennan.
In 2009, Chef Judd accepted an opportunity to help open the city's iconic Roosevelt Waldorf Astoria Hotel. It was here, that he honed his culinary skills and they flourished even further once he was promoted to the Executive Sous Chef at the hotel. Chef Judd specialized in enhancing and elevating the level of luxury that he brings to his Cajun/Creole dishes.
In his spare time, Chef Judd enjoys spending time with his family, traveling abroad and home brewing.
