||Olivier Zambaux has been part of the Swan & Dolphin family since 2004, previously as the Assistant Director of Banquets and General Manager for Shula’s Steak House. In January 2016, he was promoted to Director of Banquets, overseeing all banquet operations for our property which features 331,000 square feet of meeting and exhibit space.
Olivier hails from Sainte Menehould, France and is a graduate of the University of Reims, France. He is a certified sommelier and, in addition to his banquet duties, trains our future sommeliers as the instructor of our sommelier preparation class. Olivier also shares his knowledge with hotel guests each fall in his “Base to Bubbles” Champagne seminar during our annual Food and Wine Classic. He has numerous published articles showcasing his passion for excellence and champagne, “Raising the Bar, Discovering the Perfect Pairing with the Help of Sommeliers” (published in Meeting Excellence Magazine Summer 2014) and “Sante’ A Celebration of Champagne” (published in Orlando Magazine February 2016) to name a few. Olivier is a proud recipient of the WDW Swan & Dolphin prestigious Leadership Award and continues to showcase his passion and ability to lead on a daily basis in banquet operations.
